WHAT IS YOUR FAVORITE DISH TO MAKE WITH YOUR KIDS AS HELPERS?

We love to make our own pizza, with every type of sauce and topping that you can imagine! And our It's Summer! Fruit Salsa with Cinnamon Chips recipe is always a hit.

CAN YOU GIVE THE IT'S SUMMER! FRUIT SALSA WITH CINNAMON CHIPS RECIPE?

Yes, I’d love to share it!

INGREDIENTS:

  • 2 kiwis, peeled and chopped
  • 2 Granny Smith apples, peeled, cored and diced
  • 1 pint fresh raspberries, each cut in half
  • 1 pound fresh strawberries, hulled and diced
  • 1 tablespoon white sugar
  • 1 tablespoon brown sugar
  • 4 tablespoons orange marmalade
  • 10 flour tortillas (minimum!)
  • Butter-flavored cooking spray
  • 2 cups cinnamon-sugar mixture, to taste

DIRECTIONS:

  1. In a large bowl, combine the first seven ingredients. It is okay if the apples get brown – the strawberry juice will hide that. Cover and chill a minimum of 4 hours. It is a lot of prep (all the chopping and such), but don't try to quicken it up with a food processor; it just isn't the same.
  2. When you are ready to prepare the tortilla chips, pre-heat the oven to 350°F.
  3. Lightly spray one side of each tortilla with the butter-flavored cooking spray. Sprinkle with the cinnamon-sugar mixture (all the way to the edges), shake off the excess, then cut the tortillas into wedges or rectangles using a pizza cutter. Place the tortillas on an large, ungreased baking sheet. You can bake them in batches if you need to.
  4. Bake the cut-up tortillas in the pre-heated oven for 8-10 minutes (they will harden up slightly once they cool). Allow them to cool for 15 minutes, and repeat with the remaining tortillas, if any. Note: the chips will store well up to two weeks in a gallon-sized sealable plastic bag.
  5. Serve the chips with the chilled fruit salsa and enjoy!

I remember going to my great-grandma's each year to bake and decorate Christmas cut-out cookies along with my grandma, cousins and whoever else could make it.

WHAT TIPS OR ADVICE DO YOU HAVE FOR SOMEONE WHO IS NEW TO THE KITCHEN OR JUST GETTING THEIR KIDS INVOLVED IN THE KITCHEN?

Accept messes...they are bound to happen! "Neat" and "orderly" are two words that definitely don't come to my mind when I think of myself cooking, so why should I expect my kids to be?!
