French-Style Tuna Melts

Savor the flavors of spinach and artichokes tossed with cheese tortellini, tuna and a lemon and EVOO dressing.

Ribollita Strata

Serves 6

Rach’s recipe was inspired by a traditional Tuscan recipe for this substantial side, luncheon or light supper dish. If desired for a meal, serve with a salad. Plan to allow the strata to chill overnight or for a minimum of a couple of hours before cooking for 45 minutes. For a vegetarian-friendly meal, feel free to substitute vegetable stock for the chicken stock.

Corn and Chipotle Tortilla Soup

Individualize crunchy corn soup with a variety of "fixin’s." You can add diced chicken, pork or shrimp for a heartier meal.

Focaccia Waffles

The texture of waffles offers up a fun way to serve focaccia! Serve with an arugula salad, sliced fresh mozzarella and prosciutto alongside.

Dill and Shallot Potato Salad
