Not Fried Chicken on the Ranch and Peeler Salad

Rachael says, “This one is an updated version of shake and bake style chicken. The ranch dressing is made with buttermilk, which I always thought of as rich and fattening – not so! Buttermilk is very low in fat, as it is made from skim milk. This is one feel-good-about-it down-home supper.” Serve with Rachael’s Peeler Salad, included in the recipe below.

Tortilla with Tomato Toast

Serves 4

Rachael says, “In Spain, tortillas aren’t what you might think – you don’t use these tortillas to make a quesadilla or to roll up a burrito. Tortillas are egg pies – like a big flat omelet. They are cooked in olive oil and they are DELISH! My fav is a potato tortilla with chapata on the side. Chapata is a toasted bread that you smush tomato all over. You can make and eat this meal for breakfast, lunch or dinner! Olé!”

Not-Your-Mama’s Tuna Salad

This delish pasta salad can even go to the beach with you because it has no mayo (mayo can spoil out in the sun if it’s not kept really cold all the time). It also makes a fun and easy cold supper on a warm summer evening.

Tomato-Vegetable-Pasta Stoup

Serves 4-6

Part soup and part stew…It’s a stoup! This blend of pasta and veggies, including high-protein chickpeas, is sure to become a new family favorite. Leftovers work well in a thermos for lunch!

Rachael says, "A friend was having a baby at work and she LOVES eggplant, so I wrote these three easy meals using eggplant steaks for her. I love you, Mommel Hommel, as much as you love eggplant. PB & H Extreme

Heads up: some schools don’t allow PB & J anymore in the lunch rooms because some kids are super allergic to nuts. Check on it and have this lunch at home or school accordingly.
