Pico de Gallo

Try this Pico de Gallo as a dip or use it as a topping for grilled chicken, pork or fish. You can also try Rachael’s Avocado Tomatillo Salsa or Jalapeño Yogurt Dip.
Ingredients
- 3 medium plum tomatoes, seeded and diced
- 1 small jalapeño pepper, seeded and finely chopped
- 1/2 small onion, finely chopped
- A few sprigs of fresh cilantro, finely chopped
- Juice of 1 lime
- Coarse salt, to taste
Directions
Combine all the ingredients in a small bowl and set aside until ready to serve.
