Why take lunch kits from the store when you can pack up this healthy chicken salad in just a few minutes? You’ll have fun putting together this interactive, "DIY" meal right at school! You can get creative and add or swap in a variety of additional ingredients, such as tofu instead of Rach’s Baked Chicken Tenders, or sliced grapes.

Wa-s’up? Tuna Salad Pinwheels (Bento Lunch Box)

This fun and really funky lunch is made up of two different recipes – each one is so easy, you can make it in minutes! Bring some chopsticks to eat your Bento Lunch Box with and you really will be too cool for school! Make with Cold Ginger, Soy and Honey Sesame Noodles (Bento Lunch Box). These are fun for kids of all ages, and you can get creative – feel free to swap out the tuna for some chopped chicken breasts or use deli-style turkey as well.

Get Your Greens Pesto Salad

This salad uses summer veggies but can also be made all year round; if you can’t find asparagus, use steamed broccoli instead. This makes a great side dish for a barbecue, or a main dish with some crusty bread and a tomato salad. Rosemary adds, "My four-year-old helps me make this by sampling the asparagus and pine nuts and stirring everything together when done."

Spinach and Three Cheese Panini, Italian Flag Panini and Pizza Panini

Panini is what Italian kids call sandwiches. Sometimes the sandwiches are hot like grilled cheeses. They are really good and make a fast dinner when no one wants to cook. In this recipe, you will build two panini of each kind, for six panini total. When they are all made, a grown-up helper (GH) can cook them up and help you serve them. Each person can have one half-sandwich of each kind.
