Shrimp and Shells with Pancetta and Peas

Serves 4, with small-portion seconds for some

Rachael says, "Shrimp and pasta seashells? This one is as cute as it is tasty and simple. Peas and bacon or pancetta have been a favorite of mine since I was little. Adding protein and pasta turns an old, favorite side dish into a main course."

Giant Chicken Taco Nachos

Serves 4

A tostada is like a mega size nacho: a tortilla topped with beans or meat and cheese and veggies. Try this simple, fun Mexican-American meal with your family and friends. Each Taco Nacho is made on a crispy baked flour tortilla rather than corn chips. It’s topped with chicken and taco sauce, cheese and salad – Yum-Olé!

More Peas If You Please Penne

Serves 4

Penne is called “penne” because it looks like a pen point for fancy fountain pens. Penne is an Italian word that sounds the same as the English word for the same thing – cool! Did you know you knew Italian? You do now! Enjoy these “pens” with peas and cheese!

Chicken Sausage, Pepper and Onion Stoup with Tomato-Basil Gobble-‘Ums

Serves 6

Thinner than a stew, but thicker than a soup…it’s a stoup! Braised sausages in a thick pepper and onion soup with cubed sundried tomato and basil garlic bread on top make for a delish dish! Serve with a tossed green salad dressed with oil and vinegar.

Turkey Sweet Potato Shepherd’s Pie and Cran-applesauce Sundaes

Serves 4-6

Thanksgiving for four, for any day of the year! At Yum-o!, we believe in all things in moderation. Special treats like the Cran-applesauce Sundaes included in this recipe are to be eaten once in a while and only after you’ve been a good eater the rest of the time. That’s why it’s called a treat!

Pork Chops with Golden Apple Raisin Sauce and Whole Wheat Mac ‘n Cheddar with Broccoli

Serves 4, with leftover mac for snack attacks!

This menu is based on the back-in-the-day idea of a good, square meal: meat, vegetable and starch. The flavors have all gotten an update, though!

Penne-Wise Pumpkin Pasta

Serves 6

This recipe is “wise” because it uses whole wheat pasta – which is high in protein and fiber compared to semolina pasta and has a tasty, nutty flavor – plus it’s "penny-wise" (Get it? “Penne” sounds like penny!), as it is both inexpensive to make and absolutely delicious!

Spanish-Style Pressed Manchego Cheese Sammies and Spicy Salad

Serves 4

This menu is perfect for a Salad and Sammie Night!

Tomato-Vegetable-Pasta Stoup

Serves 4-6

Part soup and part stew…It’s a stoup! This blend of pasta and veggies, including high-protein chickpeas, is sure to become a new family favorite. Leftovers work well in a thermos for lunch!

Not-Your-Mama’s Tuna Salad

Serves 4

This delish pasta salad can even go to the beach with you because it has no mayo (mayo can spoil out in the sun if it’s not kept really cold all the time). It also makes a fun and easy cold supper on a warm summer evening.

Ground Turkey Shepherd’s Pie

Serves 4

Rachael says, “I love mashed potatoes because they taste great and because they are so much fun to smash up! In this recipe, you can smash away because we’re making Shepherd’s Pie, which is ground meat mixed up with veggies and topped with smashed potatoes. The potatoes are like a crust, so they call it a pie even though it’s not. If you’re not taller than the stove, itself, let a Grown-up Helper (GH) handle the stovetop work – make sure you’re in there for the smashing though; that’s the key to the whole thing! Yum-o!”

Whole Wheat Mac ‘n Cheese for the Family

Serves 4

Everyone can play a role in preparing this recipe, and the whole family will enjoy eating it, too! But shhh, don’t spill the beans about the secret ingredient! Serve with a green salad alongside.

Tortilla with Tomato Toast

Serves 4

Rachael says, “In Spain, tortillas aren’t what you might think – you don’t use these tortillas to make a quesadilla or to roll up a burrito. Tortillas are egg pies – like a big flat omelet. They are cooked in olive oil and they are DELISH! My fav is a potato tortilla with chapata on the side. Chapata is a toasted bread that you smush tomato all over. You can make and eat this meal for breakfast, lunch or dinner! Olé!”

Spicy Tomato and Tuna Spaghetti

Serves 4

Here’s new take on the good ol’ tuna casserole – hold the canned condensed soup, please! Go Italian and try this spaghetti or try Creamy Tarragon Tuna over Egg Noodles for a French twist on creamy tuna and egg noodles. Serve with a green salad for a super tuna supper. Rachael says, "This spaghetti is topped with anchovy breadcrumbs. In our family, we use these breadcrumbs in place of grated cheese on top of pastas made with fish, like the canned tuna used here. If you think you don’t like anchovies, you could be wrong! Once heated through and cooked down they taste like salted nuts. These breadcrumbs are really tasty!"

Rollover Jerk Chicken with Roasted Vegetables and Pineapple

Serves 4

Rollover Suppers are meals from which the leftovers can be turned into a second or even a third night’s meal with entirely different flavor. Add a DVD of Johnny Depp as a pirate and you’ve got a night in the Caribbean with this recipe, plus a head start on two more nights’ meals! Make this meal the first night, followed by Sweet and Spicy Sesame Noodles with Shredded Chicken on the second night and Jerk Chicken Quesadillas with Slaw Salad on the final night.
